Pâtisserie
At JT Pâtisserie, each creation is conceived as a composition in which flavour, texture and form are given equal consideration. Precise technique provides the structure, while acidity, sweetness, temperature and texture are held in quiet balance, allowing each element to reveal its character with clarity.
There is a deliberate restraint to the approach. A crisp layer may interrupt a silken mousse; a bright fruit note may temper the richness of chocolate; a seemingly simple finish may conceal a complex architecture beneath. Nothing is added merely for effect.
The same discipline extends to the visual language. Sculptural forms, finely worked surfaces and carefully judged proportions give each creation its distinctive presence, yet appearance is never separated from taste. The intention is always coherence: what is seen should prepare the palate for what follows.
Each creation unfolds gradually on the palate — precise without rigidity, expressive without excess, with a balance that lingers beyond the final bite.
Some creations begin in the stillness of after hours.
There is a particular calm that arrives after the day is done.
In the quiet after hours of the pâtisserie, Jeffrey often sits with a pencil and lets ideas find their way onto paper. Without the urgency of service, forms become clearer: the curve of a petal, the balance of a silhouette, the memory of something seen in passing.
These sketches are not finished answers. They are the beginning of a conversation between imagination and technique, where an instinctive line may eventually become a flavour, a texture, or a sculptural form.
Paris
In 2026, Jeffrey Tan reached a defining milestone in his culinary journey, receiving the LA LISTE Pastry Talent of the Year Award and joining a new generation of pastry chefs shaping the future of contemporary pâtisserie.
Presented at the LA LISTE Pastry Special Awards in Paris, the recognition marks an important milestone for Jeffrey and JT Pâtisserie. His work brings together the precision and discipline of classic French pâtisserie with flavours deeply connected to Asia, from pandan and gula melaka to matcha, yuzu and calamansi.
The award reflects a philosophy that has long defined Jeffrey’s approach: respecting the foundations of French technique while allowing familiar Southeast Asian ingredients to find a new expression within them. For JT Pâtisserie, it is both a recognition of the journey so far and a meaningful step into its next chapter.
